Italian Orzo Soup

This simple Italian orzo soup is not only packed with wholesome ingredients but can also be made in a quick 30 minutes.

For this recipe I use orzo pasta. Orzo pasta is a type of pasta shaped a little bigger than a large grain of rice. You can serve it hot or cold and it can come in different types of colors. The most common color is off white with a little bit of yellow like most dried pastas.

You can find orzo pasta at your local grocery store in the aisle where they sell pasta. They also make whole wheat and gluten free versions of orzo.

Some people say that orzo pasta and rice look alike. Although, I do agree they look similar they are totally different ingredients. In this picture you can compare the two.  The first bowl is rice and the second is orzo pasta.

Cooking the orzo pasta in a separate pot works best especially if you like to eat leftovers. When cooking the orzo pasta in the same pot you will find within 15 minutes that the orzo pasta will absorb your soup and leave you will plump pasta and half of your soup gone.  To cook your orzo pasta follow the directions on the back of the package. Drain your pasta with a strainer and scoop the pasta directly into your bowl. Add your soup and you have created yummy italian orzo soup.

This simple Italian orzo soup is not only packed with wholesome ingredients but can also be made in a quick 30 minutes.


  • 1 Tbsp of cooking oil ( I prefer avocado oil)
  • 5 cloves of garlic, shopped
  • 1 white onion, chopped
  • 2 carrots, peeled, chopped, and tops removed
  • 2 stalks of celery, chopped
  • 1 ½ cup of roasted tomatoes or 1 can
  • 4 cups of spinach
  • 6 cups of vegetable broth or stock
  • 1 ½ of white beans or 1 can
  • 1 tsp of salt and pepper
  • 1 tsp of dried oregano
  • 1 tsp of dried thyme
  • 1 tsp of dried basil
  • 1 tsp of red pepper chili flakes
  • 1 cup of uncooked orzo pasta


  1. Heat up a large pot over medium heat. Once hot, add the oil, garlic, onion, carrots and celery. Cook for 3-4 minutes stirring often.
  2. Add the salt, pepper, oregano, thyme, basil, and chili flakes and stir together.
  3. Combine the white beans, roasted tomatoes and mix together. Pour in the vegetable broth and let simmer for 15 minutes.
  4. While the soup is simmering cook the orzo pasta according to the package directions. Drain pasta and move aside.
  5. Add 4 cups of spinach to the soup. The spinach will cook immediately.
  6. Taste soup and add additional salt and pepper as needed.
  7. Take off heat, add pasta and serve. Leftovers will last for 3 days in the fridge and a month in the freezer.

Make it Your Own

  • To add more spice to your soup add another tsp of red hot chili pepper.
  • If you want more protein add another can cup of beans.
  • Pair this italian orzo soup with any type of bread, my favorite is garlic and olive oil.
