Ombre Pancakes

Not only are these Blue Ombre Pancakes bursting with beautiful blue hues but are thick, fluffy and moist. They only require one bowl and 20 minutes to make.

Ever wonder how to make Ombre Pancakes? They are actually quite easy and only require one extra step when making pancakes and the extra step is the fun part, the blue coloring! To achieve the blue colors in these pancakes I used a natural food coloring from Suncore Foods. I always try to use as many natural ingredients as possible. That is why I decided to cook with the Suncore Foods powder. The type of food coloring I used is called Butterfly Pea Super Juice Powder. Not only is this food coloring raw, gluten free and non- GMO but does not include added sugar.

In a large bowl combine the flour, baking powder, salt, milk, maple syrup and apple cider vinegar and whisk together until a thick batter is formed. Next, add 1 tsp of Butterfly Pea Super Juice Powder to the batter and mix. This will be the lightest color pancake you will make. Heat a large lightly oiled pan on medium heat. Scoop 1/ 4 of a cup of pancake batter on the pan.

For this batch you will make 2-3 pancakes for each batch of ombre. Cook pancake until you see bubbles break the surface then flip (around 2 minutes). Cook each pancake until golden brown. Even with the food coloring the tops of the pancakes will turn a golden brown color. For the medium panack color add 2 tsp of Butterfly Pea Powder, and for the darkest color pancake color add 3 tsp of Butterfly Pea Powder. You can modify the Butterfly Pea Powder amounts depending on how light or dark you want your pancakes.

Lastly, top with berries, coconut yogurt, and syrup and serve immediately. For this recipe I added a ½ tsp of Butterfly Pea Powder to the Cashewgurt turing it a blue hue before adding it to the top of my Ombre Pancakes.

I like to always double my recipe when it comes to pancakes since I love to eat them so much. As far as leftovers go, I just wrap them and place them in the freezer for later. They are super easy to reheat and can even be put in the toaster for a quick and easy reheating.

Ingredients

  • 2 Tbsp Butterfly Pea Super Juice Powder
  • 1 cup milk
  • 1 cup flour
  • 1 Tbsp baking powder
  • ½ tsp salt
  • 1 Tbsp maple syrup or agave
  • 1 Tbsp apple cider vinegar

Directions

  1. In a large bowl combine the flour, baking powder, salt, lemon juice, milk, maple syrup and apple cider vinegar and whisk together until a thick batter is formed.
  2. Add 1 tsp of Butterfly Pea Super Juice Powder to the batter and mix. This will be the lightest color pancake you will make. You can modify the Butterfly Pea Powder amounts depending on how light or dark you want your pancakes.
  3. Heat a large lightly oiled pan on medium heat. Scoop 1/ 4 of a cup of pancake batter on the pan.
  4. Cook pancake until you see bubbles break the surface then flip (around 2 minutes). Cook each pancake until golden brown.
  5. Add 2 additional tsp of Butterfly Pea Powder to the batter and scoop pancake batter on the pan and cook. This will create your medium blue color of the ombre pancake.
  6. Add 3 additional tsp of Butterfly Pea Powder to the batter and scoop pancake batter on the pan and cook. This will create the darkest color blue.
  7. Top with berries, coconut yogurt, and syrup and serve immediately.
  8. Leftovers will last 3 days in the fridge and a 2 weeks in the freezer.


Make it Your Own

  • Add additional toppings to your pancakes. Some of my favorites include berry jam, yogurt, fresh fruit, and agave or maple syrup.
  • You can modify the Butterfly Pea Powder amounts depending on how light or dark you want your pancakes.
  • Making these pancakes for more than 2 people? Double the recipe.
