Strawberry Oat Bars

Looking for a perfect on-the-go breakfast or snack? You must try these delicious oat bars. These scrumptious and easy bars are filled with sweet strawberries and topped with a crumbly oat crust. They are vegan, dairy-free, and only includes 8 ingredients to make. 

Before you start making your bars you will want to preheat your oven to 325 degrees fahrenheit. First, start with making the crumble of these oat bars. In a large bowl combine the oats, flour, salt, softened coconut oil, and syrup. If you do not have coconut oil you can substitute it with softened dairy-free butter. For this recipe I used agave syrup but either maple syrup or brown sugar will also work well for this crumble. 

Using a large spoon mix ingredients together until a clumpy crumble mixture is formed. Pour half of the mixture into the baking pan that you are using and press mixture down to form the bottom of the crust. You can either use a rubber spatula or your hands. Bake oat bar crust for 10 minutes at 325 degree fahrenheit.

While the bars are baking prepare your strawberries. Cut your strawberries into small pieces and place them in a bowl with vanilla and toss. You can add the optional syrup or sugar here to sweeten your strawberries before adding them to the oat bars. For this recipe I did not need so since the strawberries were already super sweet. 

With it still being summer here in North Carolina the strawberries are in season making them irresistible to pass up while shopping at the grocery store yesterday. However, if you are not using strawberries for these oat bars you can substitute the strawberries for any other type of fruit. In the past I have made a variety of oat fruit bars with different fruits. Some of my favorites include mango, blueberry, raspberry, and peach oat bars.  

Take your oat bar crust out of the oven and increase the heat of your oven to 350 degrees fahrenheit. Top the oat bar crust with jam and fruit. Sprinkle the rest of the crumble mixture on top of the strawberries. Bake Strawberry Oat Bars for 20 minutes or until the top of the crumble is golden brown. Take out of oven and let cool for 1 to 2 hours in your refrigerator before cutting into squares. Garnish your oat bars with fresh cut strawberries and serve! Bars can last in the refrigerator for  up to 4-5 days in an airtight container or in the freezer for a couple of weeks.

Make it Your Own
  • Substitute the strawberry jam and fresh strawberries with any other fruit.
  • Don’t have maple or agave syrup? Use brown sugar instead of the syrup.
  • Substitute coconut oil with vegan butter.

Oat Dough

  • 1 cup old fashioned oats
  • 1 ¼ cup unbleached all-purpose flour
  • ⅓ cup coconut oil, softened
  • ¼ maple or agave syrup
  • ¼ tsp salt

Strawberry Filling

  • 1 tsp vanilla
  • 1 tsp maple or agave syrup, optional
  • ½ cup strawberries, chopped
  • ⅔ cup strawberry jam

Directions

  1. Preheat the oven to 325 degrees fahrenheit. Line an 8 by 8 inch pan with parchment paper or grease with oil.
  2. In a large bowl combine the oats, flour, salt, softened coconut oil, and syrup. Using a large spoon mix ingredients together until a clumpy crumble mixture is formed.
  3. Scoop half of the crumble into the pan. Using a rubber spatula, press crumble into the pan creating the oat bar crust.
  4. Bake the oat bar crust for 10 minutes at 325 degrees fahrenheit.
  5. Remove pan from the oven and spread strawberry jam over the crust.
  6. In a small bowl combine the chopped strawberries, vanilla, and syrup and mix. Sprinkle freshly chopped strawberries on top of the jam.
  7. Add the remaining crumble on top of the strawberries . Bake at 350 degrees fahrenheit for 20 minutes.
  8. Let cool and refrigerate for at least 1 hour before cutting into squares.
