Roasted Carrots with Lemon Garlic Tahini Sauce

These Roasted Rainbow Carrots make the perfect side dish for your next family gathering or holiday. They are easy to make topped with roasted garlic, onions, pine nuts, and creamy Lemon Garlic Tahini Sauce. 

Looking for a side dish that is gluten-free and vegan? Then you should make these Roasted Rainbow Carrots. During my family holidays it can get a bit complicated because my husband and I are vegan, my Mom has celiac disease, and everyone else eats meat. So coming up with dishes that can accommodate everyone’s diet can be a bit challenging at times. Make these Roasted Rainbow Carrots that everyone will love! 

I used these beautiful rainbow carrots that I found at my local grocery store. Can’t find rainbow carrots? No worries, use beautiful bright orange carrots. They taste and look as lovely!

I bought these carrots already trimmed so I didn’t have to cut off the tops of the greens. However, if your carrots do have the tops still attached trim those so you just see the top root of the carrot. 

The first thing you want to do is preheat your oven to 400 degrees fahrenheit (204 C). Then using your peeler peel the outside layer of your carrots. If you notice that your carrots are extra large you will want to cut them in half horizontally making them all about the same size. You will find if you roast different sized carrots some of them will be cooked all the way through while others will still be crunchy and raw. 

Using a large sheet pan arrange the carrots evenly. Sprinkle with oil, thyme, salt, and pepper and bake for 30 minutes. While the carrots are roasting in a food processor or high powered blender combine all Lemon Garlic Tahini Sauce ingredients. Blend sauce until it becomes smooth and creamy. Take carrots out and check to make sure they are cooked all the way through. Using a fork pierce the skin of the carrot. If the fork goes easily than you carrots are done cooking. If you notice they are still raw and hard put them back in the oven for an additional 5 minutes and check again. 

After your carrots are completely cooked you will drizzle the Lemon Garlic Tahini Sauce over your Roasted Carrots and top with roasted onions, garlic, and pine nuts. Serve, eat and enjoy!

Roasted Carrots with Lemon Garlic Tahini Sauce

Ingredients

  • 1 package or 16 oz of carrots, washed, peeled, and trimmed.
  • 1 tsp oil, I used avocado oil
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp thyme
  • 5 cloves of roasted garlic (optional)
  • ¼ cup pine nuts (optional)
  • 1 small purple onion, chopped (optional)

Lemon Garlic Tahini Sauce

  • ¼ cup tahini
  • ¼ cup filtered water
  • 2 Tbsp lemon juice
  • ½ Tbsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp water, optional for thinning out your dressing.

Directions

  1. Preheat your oven to preheat your oven to 400 degrees fahrenheit (204 C).
  2. On a large sheet pan arrange the carrots evenly. Sprinkle with oil, thyme, salt, and pepper and toss. Bake for 30 minutes.
  3. In a food processor or high powered blender combine all of the Lemon Garlic Tahini sauce ingredients and blend until smooth and creamy.
  4. Take carrots out and check to make sure they are cooked all the way through. You will do this by piercing the carrots with a fork.
  5. 5. Drizzle the Lemon Garlic Tahini Sauce over your Roasted Carrots and top with roasted onions, garlic, and pine nuts. Serve, eat and enjoy!

Make it Your Own

  • Can’t find rainbow carrots? No worries, use beautiful bright orange carrots. They taste and look as lovely!
  • Don’t have onions or garlic cloves? Skip adding these toppings, they are only optional
  • This recipe is gluten free and vegan!
