This Apple Pie Chia Seed Pudding is packed with nutrients and super easy to whip up. Layered with a creamy chia seed pudding and topped with fried cinnamon apples. It is the perfect make ahead recipe when you have a busy week ahead of you. 

I love making healthy recipes ahead of time and putting them in the refrigerator for an easy grab and go snack. This Apple Pie Chia Seed Pudding is one of those great recipes to make ahead of time and eat as breakfast, snack, or dessert. Not only does it taste wonderful but keeps you feeling full longer than most snacks. 

For the chia seed pudding there are a couple of milk options that I recommend you use. I like to use either coconut, almond, or cashew milk from the carton.  There is also coconut milk from the can that you can buy but it is not my favorite choice when making Chia Seed Pudding for its thick consistency. 

After you have poured the milk into your jars you will then add the chia seeds and vanilla. You want to make sure to mix the chia seeds really well with the milk to avoid clumping. Cover the chia seed pudding jars and place them in the refrigerator to thicken for at least 4 hours. If you have time, I recommend to leave the chia seed pudding overnight to get a thicker pudding. 

Take your pudding out of the container and mix again to remove any clumps. You can add additional sweeteners like agave or maple syrup or just top it with the apples as a natural sweetener.  Divide chia seed pudding into jars and top with fried apples, pecans, coconut flakes, and hemp seeds. 

I made this Apple Pie Chia Seed Pudding with chopped pink lady apples for its crunchy texture and tart but sweet taste. However, any type of apples would taste as wonderful with this chia seed pudding.

Apple Pie Chia Seed Pudding

This Apple Pie Chia Seed Pudding is packed with nutrients and super easy to whip up. Layered with a creamy chia seed pudding and topped with fried cinnamon apples. It is the perfect make ahead recipe when you have a busy week ahead of you.


Apple Pie Chia Seed Pudding

  • 6 Tbsp chia seeds
  • 1 ½ cup dairy-free milk, I used almond
  • 1 tsp vanilla
  • 1/2 tsp neutral oil, substitute with water
  • 2 red apples, chopped into bite size pieces
  • 1 tsp cinnamon
  • 2 Tbsp maple syrup
  • â…› tsp salt
  • ¼ cup pecans
  • 1 Tbsp dried coconut flakes (optional)
  • 1 Tbsp hemp seeds (optional)

Directions

  1. Combine dairy free milk, chia seeds, 1 tsp vanilla and 1 tablespoon of syrup (optional) together in an airtight container and mix. Place it in the refrigerator for at least 4 hours to thicken.
  2. Heat a small pan on low to medium heat. Add the oil and chopped apples and fry for 5 minutes.
  3. Add 1 tsp vanilla, cinnamon, and salt to the pan of apples and toss. Cook for an additional 2 minutes.
  4. Mix chia seed pudding again to avoid clumping. Divide the chia seed pudding into cups and top with the fried apples. Top with pecans, hemp seeds, 1 tablespoon syrup, and serve!

Make it Your Own

  • Don’t like pecans? Substitute with any of your favorite nut to give a nice crunchy texture to your pudding
  • Make the chia seed pudding overnight and let thicken for 8 hours.
  • Leftovers last for 2-3 days covered in the refrigerator.
