Chocolate Peanut Butter Bark

No bake Chocolate Peanut Butter Bark. Swirled with creamy peanut butter and topped off with pretzels, marshmallows, hazelnuts, and pomegranate jewels. Whipped up in 10 minutes or less this chocolatey dessert is perfect to bring to your next holiday gathering. 

Get creative when making this dessert and add any of your favorite toppings. Some other tasty toppings include oreos, cookies, white chocolate chips, and dried fruit. 

After melting your chocolate you are going to pour it on a sheet pan that is lined with parchment or wax paper. Using a spatula spread the chocolate out evenly. You want your chocolate bark to be about ¼ inch or thicker. If you would like your bark thicker, melt three cups of chopped chocolate instead of two and half cups. 

For this bark I used peanut butter to swirl on the top of the melted chocolate. However, you can either omit the peanut butter altogether or substitute it for a different type of nut butter. Some of the other nut butters I recommended include, cashew, almond, sunflower, and cookie butter. 

I used natural peanut butter so it was already a runny texture. If your nut butter is thick you can thin it by adding a tsp of milk and mix it until it becomes a consitinsty that is easy to pour. After pouring your chocolate and spreading it on the pan you will  use a small spoon and add 3 dollops of but butter randomly on top of the chocolate. Using a spoon, lightly drag the nut butter through the melted chocolate making these beautiful swirl designs.

After adding the peanut butter you will then add your topping for your bark. I decided to use pretzels, mini marshmallows, hazelnuts, and pomegranate seeds. The fun part about this recipe is that you can be as creative as you want with your ingredients by adding as many toppings as you want.

Once you have added your toppings you will want to pop the bark in the refrigerator for at least 3 hours to harden. I liked to leave my bark in the fridge overnight to ensure it has completely chilled before I cut it into pieces. You will notice because the chocolate I used did not have any preservatives or additives the bark will not become extremely hard but semi-hard.

Chocolate Peanut Butter Bark

  • 3 cups vegan chocolate, chopped
  • 3 Tbsp peanut butter, thinned (substitute for any nut butter)
  • 3 Tbsp chopped hazelnuts
  • 2 Tbsp pomegranate seeds
  • ¼ cup vegan marshmallows
  • ¼ cup pretzels, gluten-free

Directions

  1. Line a medium size baking pan with parchment or wax paper and set aside.
  2. Combine the chopped chocolate in a microwave-safe bowl. Microwave for 30 second intervals stirring between each until the chocolate has melted.
  3. Pour the chocolate on the baking pan. Using a rubber spatula evenly spread the melted chocolate on the pan. You want it to be at least ¼ inches or thicker.
  4. Drizzle the peanut butter over the melted chocolate or add 3 dollops of peanut butter randomly. Holding a small spoon drag the spoon through the peanut butter and chocolate creating swirls. If your peanut butter is too thick, thin it by adding 1 tablespoon of milk prior to adding it to the melted chocolate.
  5. Place your toppings randomly on the melted chocolate and peanut butter.
  6. Put the bark in the refrigerator for at least 3 hours to harden. Cut into pieces, eat and enjoy!


Make it Your Own

  • If you are not vegan substitute chocolate for white or milk chocolate.
  • Have extra time? Toast your nuts prior to adding them to your bark.
  • Store this bark in the refrigerator in an airtight container for up to 1 week .
