Peanut Butter Pretzel Bars

Who else loves peanut butter and chocolate? 

Five ingredient Peanut Butter Pretzel Bars layered with a creamy peanut butter pretzel filling and topped with chocolate. No bake, vegan, gluten-free, and 15 minutes to prep! 

My Mom is visiting me this week and I knew I wanted to make a sweet treat for her arrival. She has celiac disease which means that I needed to create something that is gluten-free. That’s when I decided to create  these delicious Peanut Butter Pretzel Bars. To insure the bars are celiac friendly I simply just used gluten-free pretzels. They are primarily made from rice flour, and this adds an extra layer of crunch, as in rice krispie treats.

For this recipe I used an 8 inch by 8 inch pan. It was lined with parchment paper to insure an easy removal. If you do not have this size pan,  you can use a 9 inch by 13 inch. You will then need to double the recipe.

You can whip up these Peanut Butter Pretzel Bars in 15 minutes or less. The first thing you want to do is make sure you have the correct vegan and gluten-free ingredients. I am very fortunate to have a Trader Joes near me, so I was able to find vegan chocolate pieces without milk. 

However, if you are not near a Trader Joe’s I would just recommend making sure to read the chocolate packages to see what ingredients are used. If you are not able to find vegan chocolate in small pieces dark chocolate bars will also work. Just break it up into small pieces before melting. 

 TIPS WHEN MAKING YOUR BARS

  • I highly recommend that you use parchment paper to line your pan. Until the peanut butter filling sets it will be super sticky. 
  • To avoid powdered sugar clumps, use a sifter before adding the powdered sugar to the melted butter. 
  • When moving the peanut butter mixture to the pan I recommend using a rubber spatula. It helps to get all of the sticky mixture from your bowl to the pan.
  • I placed my pretzels in a zip lock bag and used a bowl to crush them. However, you can also use a food processor to pulse them. Make sure not to pulse them to much turning them into pretzel dust. 
  • Before melting the chocolate you can add a tablespoon of coconut oil to speed up the hardening process. 
  • Let the bars set in the pan for 2 hours in the refrigerator. Then remove them and cut into squares. It is important that you cut them into separate squares allowing them to chill and firm up for an additional hour. * They definitely edible before cutting them into squares however, they easily melt.

Peanut Butter Pretzel Bars

Peanut Butter Pretzel Bars

  • 1 cup chocolate chips, I used vegan chocolate
  • 1 ½ cup creamy peanut butter
  • 2 cups crushed pretzels, I used GF pretzels
  • 2 cups powdered sugar, sifted
  • ½ cup vegan butter, melted
  • 1 tsp coconut oil (optional)

Directions

  1. Line an 8 inch by 8 inch pan with parchment paper and set aside.
  2. In a medium bowl mix the melted butter and sifted powdered sugar together.
  3. Slowly add peanut butter and crushed pretzels, creating the filling.
  4. Using a rubber spatula pour the mixture in the pan creating an even layer.
  5. Make the chocolate coating. Combine the chocolate and coconut oil (optional) in a microwave-safe bowl. Microwave for 30 second intervals stirring between each one until the chocolate has melted.
  6. Pour the chocolate over the peanut butter mixture. Using a rubber spatula evenly spread the chocolate making sure it even.
  7. Place bars in the refrigerator for 2 hours to set. Then remove and carefully cut into squares. It is important that you cut them into separate squares allowing them to chill and firm up for an additional hour. The bars are definitely edible before cutting them into squares however, they easily melt.
  8. These bars will last for a week in the refrigerator wrapped up.


Make it Your Own

  • I highly recommend that you use parchment paper to line your pan. Until the peanut butter filling sets it will be super sticky.
