Spicy Buffalo Cauliflower Bites

These Spicy Buffalo Cauliflower Bites are the ultimate party appetizer. Baked to perfection and tossed with delicious spicy buffalo sauce. Pair these with vegan ranch, fresh carrots and celery. 

Are you gluten-free? Make these baked cauliflower bites with gluten-free flour and panko bread crumbs. Just make sure to check that your buffalo wing sauce is also gluten-free before brushing on your bites. My mom has celiacs disease so I always make sure to double check the labels checking for gluten. 

HOW TO GET CRISPY CAULIFLOWER BITES

  • Make sure when you are chopping your cauliflower into pieces that they are about the same size. They should be small enough that you can eat them in 2 bites.
  • Don’t forget to add oil to your batter. Just adding a little bit of oil really helps the cauliflower crisp up in the oven. 
  • Baking your bites twice in the batter really insures that they are crispy. Bake them once for 10 minutes, then flip, and bake them again on the other side for an additional 10 minutes. 
  • Brushing your bites with the buffalo sauce instead of tossing them really helps crisp your bites up. This just ensures that there isn’t too much sauce making them soggy. 
  • Adding melted butter to your buffalo sauce really adds extra flavor and crisp. 
  • If you feel like your bites are not crispy enough after baking them with the buffalo sauce, turn your oven to broil 500 F to 550 F (260 – 290 C.) Broil them for 2-3 minutes watching them carefully. They can burn quickly, so I like to keep the oven light on and watching them for those couple of minutes. 

When adding my spicy buffalo sauce I used a kitchen brush. I didn’t add sauce to the bottom of the pieces but just to the tops of the cauliflower. This was to insure that they don’t lose that cripsyness from dipping them completely in sauce. 

I paired these Spicy Buffalo Cauliflower Bites with dipping sauces like vegan ranch. However, I also love to pair them with fresh carrots, celery, cucumbers, and bell peppers to make a complete party tray.

Spicy Buffalo Cauliflower Bites

These Spicy Buffalo Cauliflower Bites are the ultimate party appetizer. Baked to perfection and tossed with delicious spicy buffalo sauce. Pair these with vegan ranch, fresh carrots and celery.


Spicy Buffalo Cauliflower Bites

  • 1 medium-large head of cauliflower, cut into bite sized pieces
  • 1 cup filtered water
  • ½ cup all-purpose flour
  • ⅓ cup panko bread crumbs
  • 1 Tbsp oil, I used avocado
  • 1 tsp garlic powder
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 2 Tbsp dairy-free butter, melted
  • ⅔ cup buffalo wing sauce

Directions

  1. Preheat your oven to 425 degrees F (218.3 C). Line a large baking pan with parchment paper or spray with cooking oil and set aside.
  2. In a large bowl combine the garlic powder, oil, flour, panko bread crumbs, water, and whisk until your have formed a batter.
  3. Add the cauliflower to the bowl of the batter and toss until the batter has covered the cauliflower bites.
  4. Spread the cauliflower on a large baking pan evenly. Sprinkle the salt and pepper on the bites and bake for 10 minutes. Then take out, flip and bake for an additional 10 minutes.
  5. In a bowl combine the buffalo wing sauce and melted butter. Brush the buffalo wing sauce mixture on the cauliflower bites.
  6. Bake bites for an additional 10-15 minutes.
  7. Pair your bites with vegan ranch and eat warm.

Make it Your Own

  • I recommend eating these bites right when they come out of the oven. They taste best fresh and warm.
  • Pair these bites with dipping sauce and fresh vegetables for the ultimate party platter.
  • If you feel like your bites are not crispy enough after baking them with the buffalo sauce, turn your oven to broil 500 F to 550 F (260 – 290 C.)
