Vegan Funfetti Rice Krispie Treats

These Funfetti Rice Krispie Treats are ooey-gooey and super easy to whip up. Made with only 5 ingredients these vegan treats are sure to impress adults and kids alike. Eat them for a snack, dessert, or just because!  

Rice Krispie treats will always bring me back to my childhood days. They were one of my little sister’s favorite desserts growing up. Anytime we would go to a store where they would sell these she would always beg my Mom to get them.

Not only were these fun to whip up but making these Funfetti Rice Krispies brought back the best childhood memories. 

What makes these Funfetti Rice Krispie Treats vegan?

Marshmallows 

Did you know that most marshmallows are not vegan? They contain gelatin which is protein from an animal. So instead of using marshmallows with gelatin I recommend either using Dandies all natural marshmallows or Trader Joes vegan marshmallows. Both companies sell these in mini form or regular size. Can’t find these near you? You can order Dandie marshmallows online. 

Dairy-Free Butter 

Most rice krispie treats are made with regular or real butter, but of course these are vegan so I used dairy-free butter. For these treats I recommend using high quality dairy-free butter. A couple brands that I really like to use are Earth Balance Organic Buttery Spread and Forager Project Buttery Spread. 

Sprinkles

Yes, I said it. Some sprinkles are not vegetarian or vegan and contain confectioner’s glaze which is made from bugs. To get a whole list of vegan sprinkles check out this article. Or just check the back of the label of your sprinkles. 

After you have pressed the rice krispie treats in your pan you will need to let them set for at least 45 minutes. If you can’t wait, no worries! They just might not hold their shape as well.

I cut these into 2 inch by 2 inch squares to have more (around 20 squares). However, if you can cut them into bigger pieces or even get creative and use cookie cutters to cut them into different shapes. 

Tips when making these Funfetti Rice Krispie Treats

  • The first thing you will want to do is make sure to either line your pan with parchment paper or grease it up with melted butter or oil. This will prevent the treats from sticking to the bottom of your pan.
  • I used a 9 by 13 inch pan. If you don’t have this size, no worries. Using a smaller pan will just make thicker treats. 
  • To make these treats I recommend using a large pot or large dutch oven pot. I have found a medium pot is not large enough.
  • When you add your bag (10 ounces) of marshmallows to your pot be careful to watch them very carefully. You do not want them to burn or melt too much. Overheating them will make your treats really hard.  
  • After pouring your sprinkles in your pot give them a good mix and stop. The more you mix the higher chance your sprinkles will bleed color into your mixture. 
  • Take your mixture immediately off the heat after adding your sprinkles. You don’t want your mixture to burn. 

When you transfer the mixture to your pan I recommend using a spatula or a piece of parchment paper to press the mixture down. Be careful not to pack it too much, or it will make the treats hard instead of gooey.

I topped my treats with additional melted marshmallows and sprinkles. You can eat them as (seen in the photo above) or put your own twist. Some other fun things to add to the top of your treats include, colored icing, chocolate chips, dried strawberries, and pieces or candies.

Vegan Funfetti Rice Krispie Treats

  • ½ cup dairy-free butter
  • 1 tsp vanilla
  • 6 cups of rice krispie cereal, if you are gluten-free make sure to check that they are GF.
  • 15 ounces (1 ½ 10 ounce bags) of vegan marshmallows
  • 4 Tbsp sprinkles
  • ¼ tsp salt (optional)

Directions

  1. Line a 9 x 13 inch pan with parchment paper or grease with melted butter. Set aside.
  2. Heat a large pot or dutch oven over medium-low heat. Add the butter, stirring occasionally, until it melts.
  3. Add 10 ounces (1 bag) of marshmallows to the pot. Stir marshmallows until slightly melted.
  4. Pour the vanilla, rice krispie cereal, and salt into the pot. Stir until all cereal is covered with gooey marshmallow.
  5. Add 5 ounces (half a 10 ounce bag) of marshmallows and sprinkles. Stir until mixed. Be aware not to over mix otherwise the sprinkles might bleed their color.
  6. Transfer mixture to your pan. Using a spatula or parchment paper evenly press the mixture down into the pan. Top with additional sprinkles (optional). Let the rice krispie treats set for 45 minutes before cutting into 2 inch squares.
  7. Leftovers last up to 2-3 days wrapped up in wax paper. Refrigeration is not necessary when wrapped up.

Make it Your Own

  • Are your gluten-free? Make sure to double check that the rice cereal is certified gluten-free.
  • Substitute rice cereal for any other type of delicious cereals.
  • Don’t have sprinkles? No worries, just skip adding those.
