Vegan French Toast

Looking for a new breakfast recipe? This eggless Vegan French Toast will not disappoint. It is soft in the inside and crispy on the outside. This delicious French Toast is  filled with flavors of almond, vanilla, and cinnamon and topped with maple syrup, yogurt, sliced almonds and berries.

Did I mention that this recipe is very EASY to make? It only requires 7 ingredients and can be made in 15 minutes or less. When making this french toast you want to make sure that the bread that you use is not super soft. Using really soft bread will make your Vegan French Toast soggy. Make sure to get firm bread, or use older bread that has gotten a little hard. For my Vegan French Toast I used sourdough bread that I bought earlier on in the week.

To make this eggless Vegan French Toast you will mix cinnamon, vanilla, almond extract (optional), ground flax seed, agave and plant milk together in a medium or large bowl. Whisk the ingredients together for a couple minutes until completely mixed. The cinnamon will want to float to the top where the ground flax seeds will sink to the bottom on the bowl so it’s important to give it a good whisk.

Heat a large pan over medium heat and add the coconut oil. Mix your french toast mixture once more. Dunk your bread into the mixture making sure the bread is completely soaked on both sides. Place bread on the heated pan and cook for about 2 minutes or until brown then flip and cook on the other side. Repeat these steps until you have cooked all of your bread. Garnish your Vegan French Toast with your choice toppings and eat immediately.

One of my favorite things about french toast is that you can add any ingredients to the top of your french toast that you want. For this recipes I used cashew yogurt, sliced almonds, raspberries, strawberries and maple syrup. My other go to toppings include nut better, cinnamon and agave syrup.

Ingredients

  • 8 slices of bread (firm bread)
  • 1 tsp vanilla
  • ¼ tsp almond extract (optional)
  • ½ tsp cinnamon
  • 1 Tbsp coconut oil
  • 1 cup plant milk ( I used almond)
  • 1 Tbsp agave syrup
  • 2 Tbsp ground flax seeds

Toppings

  • Fresh fruit
  • Sliced almonds
  • Yogurt
  • Maple Syrup for drizzling

Make it Your Own

  • Agave syrup can be substituted with maple syrup.
  • I used almond milk but coconut milk or soy milk is just as great to use.
  • Want thick french toast? Cut your bread into thicker slices (around 2 inches) or buy pre cut thick bread.
