Black Bean Salad with Tahini Chipotle Sauce

Ingredients
  

Salad

  • 1/2 head lettuce chopped, about 5-6 cups
  • 1/4 cup red onions chopped
  • 1/2 cup tomatoes chopped
  • 1/2 cup bell peppers
  • 1 can black beans drained and rinsed
  • 1 medium avocado chopped
  • 1/4 cup cilantro optional

Sauce

  • 1/4 cup tahini
  • 1 chipotle in adobo sauce add less or more depending on your spice level
  • 2 tbsp water to thin add more or less
  • 1 lime juiced

Instructions
 

  • Prepare Salad Ingredients: Gather your desired salad ingredients, including lettuce, onions, tomatoes, bell peppers, black beans, avocado, and cilantro. Wash and chop the vegetables as needed.
  • Assemble Salad: In a large bowl, combine the lettuce, onions, tomatoes, bell peppers, black beans, avocado, and cilantro. 
  • Make Tahini Chipotle Sauce: In a blender, combine 1/4 cup tahini, one chipotle adobo from the can (adjust for spice preference), the juice of one lime, and water to thin to your desired consistency. Blend until smooth. Taste the sauce and adjust seasoning as needed. Add more chipotle adobo for extra spice, lime juice for tanginess, or water to thin if necessary.
  • Once the sauce is ready, pour it over the assembled salad in the bowl. Gently toss the salad until all the ingredients are evenly coated with the Tahini Chipotle Sauce. Transfer the salad to serving plates or bowls and enjoy immediately!
