Creamy Miso Udon

This udon is creamy, flavorful, and a dish your whole family will love.

Ingredients
  

Broth

  • 2 tsp sesame oil
  • 1 onion chopped finely
  • 3 cloves garlic pressed
  • 1 small knob ginger grated
  • 3 Tbsp miso paste white
  • 1 Tbsp white sesame seeds mashed into tiny pieces
  • 5 cups veggie broth
  • 1 cup unsweetened soy milk
  • 2 Tbsp soy sauce
  • 2 Tbsp Sriracha optional
  • 2 90g bundle udon noodles

Toppings

  • Roasted Butternut Squash
  • baked tofu
  • sautéed mushrooms
  • green onions
  • grated carrots

Instructions
 

  • Heat a large pot on medium heat. Add the oil and onions and cook for 2 minutes. Combine the garlic, and ginger and cook for 2-3 minutes stirring constantly.
  • Add the miso paste, sesame seeds, sriracha, and soy sauce. Cook for 1 minute, stirring. Pour the broth and add your noodles. Cook for the time it takes for the noodles to be cooked. For the udon noodles it was 5 minutes.  Pour in the milk and stir.
  • Divide into bowls and top with your favorite toppings.
