These crispy air fryer rice paper dumplings are folded into simple little squares, packed with a flavorful tofu and veggie filling, and air fried until perfectly crispy on the outside with a chewy, dumpling-like texture.
In a large bowl, combine the shredded tofu, cabbage, carrots, green onions, soy sauce, garlic, ginger, and chili oil (if using). Mix until everything is evenly combined.
Fill a shallow bowl or plate with warm water. Dip one rice paper wrapper into the water for a few seconds until it just begins to soften.
Place the softened wrapper on a clean surface and add about one-sixth of the filling to the center.
Fold the rice paper over the filling like a small parcel. Dip a second rice paper wrapper into the warm water and wrap the dumpling a second time.Repeat with the remaining filling.
Lightly spray both sides of each dumpling with oil. Place the dumplings in a single layer in your air fryer basket, leaving a little space between each one.
Air fry at 350 degrees F for 10 minutes until the outside is golden and crispy. Serve immediately with soy sauce, sweet chili sauce, or your favorite dumpling dipping sauce.
