Ingredients

Filling

  • 1 cup 1 cup extra-firm tofu grated
  • 1 cup cabbage thinly diced
  • 1 cup carrots grated
  • 1/4 cup green onions chopped
  • 2 tbsp soy sauce
  • 1 tsp garlic minced
  • 1/2 tsp ginger grated
  • 1 tsp chili oil optional, for extra flavor

Dumplings

  • 12 rice paper wrappers
  • 1 tbsp oil avocado

Instructions

  • In a large bowl, combine the shredded tofu, cabbage, carrots, green onions, soy sauce, garlic, ginger, and chili oil (if using). Mix until everything is evenly combined.
  • Fill a shallow bowl or plate with warm water. Dip one rice paper wrapper into the water for a few seconds until it just begins to soften.
  • Place the softened wrapper on a clean surface and add about one-sixth of the filling to the center.
  • Fold the rice paper over the filling like a small parcel. Dip a second rice paper wrapper into the warm water and wrap the dumpling a second time. Repeat with the remaining filling.
  • Lightly spray both sides of each dumpling with oil. Place the dumplings in a single layer in your air fryer basket, leaving a little space between each one.
  • Air fry at 350 degrees F for 10 minutes until the outside is golden and crispy. Serve immediately with soy sauce, sweet chili sauce, or your favorite dumpling dipping sauce.
