Vegan S’more Bars


Raise your hand if you love S’mores? These homemade Vegan S’more Bars are baked to perfection and without requiring a campfire! These bars are layered with a crumbly cookie crust, gooey chocolate, and pillowy marshmallows. Make this dessert this season that everyone in your family will love. 

What is one food that brings you back to your childhood? For me, one of those it is S’mores. My mom would take us camping and we would always end our night with these amazing sweet treats. Since I have gotten older I we haven’t been camping in a while. So I decided to make my own version of S’mores without making a big campfire!

Making these S’more Bars are very simple to make. The first thing you want to do is make sure you have the correct ingredients. I am very fortunate to have a Trader Joes near me so I was able to find vegan marshmallows and chocolate pieces without milk. However, if you are not near a Trader Joe’s I would just recommend making sure to read the back of marshmallow and chocolate packages to see what ingredients are used. I have found that most marshmallows are made with gelatin which is an animal product. Along with most chocolate have some kind of milk in it as well.

For this recipe I used an 8 inch by inch pan and lined it with parchment paper to insure an easy removal. Preheat your oven to 350 degrees Fahrenheit (176.6 C).  Using a food processor combine brown sugar, flour, Aloha Vanilla Crunch Protein Bar, almonds, milk, salt, and vanilla. If you do not have the protein bar you can substitute that with an additional ¼ cup of flour. 

Process the ingredients until it has becomes a crumble. Then slowly add the softened coconut oil to the mixture until it becomes a cookie dough like texture. Using your hands or a rubber spatula add 3 / 4 of the mixture to the pan and press down creating a thin cookie layer. Bake thin layer for 15 minutes at  350 degrees Fahrenheit (176.6 C).  

After your first layer is done baking remove from the oven and add a thin layer of chocolate on top of the cookie crust. Then evenly sprinkle the additional cookie crust on top of the chocolate. 

Lastly, add an even layer of mini marshmallows on top of the crumble. I ended up using 1 ½ cups of marshmallows but if you are a huge fan of marshmallows you can add more. Place your Vegan S’more Bars back in the oven for an additional 10 minutes. 

To get the tops of your marshmallows a golden brown color turn your oven to broil for 1- 2 minutes watching it very closely. During this process I turn on my oven light and watch for those couple of minutes. As soon as I see that it is starting to get to golden I take them out immediately. If you leave it in any longer the tops of the marshmallows will burn.

Vegan S'more Bars

Vegan S'more Bars

  • 1 cup chocolate chips
  • 1 ½ cup vegan marshmallows, I used Trader Joe’s
  • ½ cup coconut oil, softened
  • 1 cup whole wheat flour or all- purpose flour
  • ¼ cup almonds
  • 1 Aloha Vanilla Almond Crunch Protein Bar, substitute with ¼ cup flour
  • 1 tsp vanilla
  • 3 Tbsp dairy-free milk, I used almond
  • ⅛ tsp salt

Directions

  1. Preheat your oven to 350 degrees Fahrenheit (176.6 C). Line an 8 inch by 8 inch pan with parchment paper and set aside.
  2. Using a food processor combine the brown sugar, flour, Aloha Vanilla Crunch Protein Bar, almonds, milk, salt, and vanilla. If you do not have a protein bar you can substitute it with an additional ¼ cup of flour.
  3. Process the ingredients until it has becomes a crumble. Slowly, add the softened coconut oil to the mixture and pulse until it becomes a cookie dough like texture.
  4. Using your hands or a rubber spatula add ¾ of the mixture to the pan evenly. Press down the crumble creating a packed and even cookie layer. Bake for 15 minutes.
  5. Remove from the oven and add a layer of chocolate chips to the top of the crust. Using, the additional cookie dough crumble evenly sprinkle on top of the chocolate chips.
  6. Lastly, add a layer of mini marshmallows on top of the chocolate chips and crumble. Place your Vegan S’more Bars back in the oven and bake for an additional 10 minutes.
  7. Once the S’more Bars are done baking turn on your oven to broil to get the top of your marshmallows golden brown. Broil for 1-2 minutes watching very carefully (they can burn very quickly).
  8. Place bars in the refrigerator for at least 1 hour to set. Carefully cut bars into 8 squares and serve immediately.

Make it Your Own

  • If you are vegan make sure to use vegan chocolate and marshmallows.
  • Can’t find a Vanilla Almond Crunch Aloha Protein Bar? Substitute the bar with ¼ cup flour.
  • To get the tops of your marshmallows a golden brown color turn your oven to broil for 1- 2 minutes watching it very closely. During this process I turn on my oven light and watch for those couple of minutes. As soon as I see that it is starting to get to golden I take them out immediately. If you leave it in any longer the tops of the marshmallows will burn.
