Ingredients
  

  • 1/3 cup cashews
  • 3/4 cup Pistachios
  • 1/4 cup pitted dates
  • 1 tsp vanilla
  • pinch salt
  • 1 1/2 cup Unsweetened soy milk

Instructions
 

  • Combine all the ingredients in a blender. Blend until smooth and creamy.
  • Pour the mixture into ice cube trays and freeze until solid. Once frozen, let the ice cubes thaw for a couple of minutes.Transfer the thawed cubes back into the blender.Blend until a creamy, crumbly texture is achieved.
  • Using an ice cream scoop, scoop the mixture into serving bowls. Garnish with crushed pistachios for added texture and flavor. Serve immediately and enjoy!

    Can i freeze this and save it for later?

      Yes you can. The texture just won’t be the same. You could always add it back to your processor to achieve the creamy scoop able texture.

    I used whole milk (cows) and it came out a bit grainy, could it be because i didnt use a light milk?

      I think it’s because the blender didn’t blend the cashews and pistachios enough. You could try soaking your cashews in warm water for an hour or overnight (in the fridge) before blending. Then before pouring the mixture in ice cube trays I would just taste it and make sure it isn’t grainy. If it is just keep blending. I hope this helps 🙂
