The choices of vegetables and grains for this veggie bowl are endless. I like to build my veggie bowl with ingredients that are nourishing and tasty.
Here are the ingredients that I used for my bowl.
Jalapenos
Avocado
Carrots
Green Onions
Cucumbers
Radishes
Shelled Edamame
Brown Rice
Nori/Sesame Seeds
Lime
I used raw vegetables but if you are not a fan of raw vegetables you can also use cooked vegetables.
Don’t have these ingredients? No worries, just use what you already have in your refrigerator or pantry. Some grains that I recommend are white rice, quinoa or rice noodles.
For the sauce in this Veggie Bowl I made a Jalapeño Sauce. It is super creamy, flavorful, and only requires 4 ingredients. It gives the perfect amount of kick to your dish and I like to drizzle it over the top so I get some in every bite!

INGREDIENT SAUCE SWAPS
Here are some ingredients that you can swap out with what you already have in your pantry.
You can also easily make this recipe gluten-free by substituting specific ingredients as well. Just make sure to double check the back of the labels to make sure they do not include wheat.
Vegan Jalapeno Lime Mayo – You can use unflavored mayo instead. I just recommend adding 1 teaspoon of lime to your creamy sauce. If you want an extra kick you can also chop up a little bit of fresh jalapeno into really small pieces and add it to your sauce.
Sriracha– Substitute sriracha with chili sauce. You can add more or less depending on how spicy you want it.
Tamari– Swap tamari for soy sauce. Just make sure that if you are gluten-free that you use gluten-free sauce.
I paired my Veggie Bowls with brown rice and garnished it with sesame seeds, nori, and chopped green onions. Though, the options of sides and garnishes are endless.

Veggie Bowl with Creamy Jalapeño Sauce
Veggie Bowl
- ½ avocado, sliced
- 1 small jalapenos, sliced
- 1 medium carrot, shredded
- 1 small cucumber, ribbioned
- 2 radishes, sliced
- ½ cup shelled edamame
Brown Rice
- 1 cup rice, cooked according to the back of the package, gluten-free
Creamy Jalapeño Sauce
- 1/4 cup Vegan Jalapeno Lime Mayo
- 1 Tbsp sriracha
- 1 tsp sesame oil
- 2 tsp tamari or soy sauce, gluten-free
Garnish
- sesame seeds
- nori
- chopped green onions
Directions
- Divide the cooked brown rice and veggies between two bowls.
- In a medium bowl combine all of the Creamy Jalapeno Sauce ingredients together and whisk.
- Drizzle the sauce on top of your bowl and eat.
- Garnish with sesame seeds, nori, and chopped green onions.
Make it Your Own
- Get creative and use any type of vegetables that you have in your refrigerator.
- Pair your bowl either white rice, brown rice, quinoa, or rice noodles.
- Garnish your bowl with chopped green onions, sesame seeds, nori, and sliced lime.
